Avocado and Lemon Water (Agua de Aguacate y Limón Amarillo)

  Agua de limón, or Key lime water, is probably the most common agua fresca. This recipe is a fun spin on the traditional, using lemons instead of Key limes and adding avocado to acknowledge the very classic combination of citrus and avocado, but out of their normal context. Yana Volfson, our dear friend and restaurant beverage director at Cosme and Atla, came up with this recipe. We love it because it illustrates how working in New York has opened our horizons and expanded our palates. Before this, we Mexicans had never thought of an avocado as something you drink. Now, she has made us love it this way too.

  

Ingredients

1 avocado, halved

  4 cups (950 ml/32 fl oz) water

  ½ cup (120 ml/4 fl oz) lemon juice or lime juice

  ½ cup (100 g) sugar, plus more to taste

  Scoop the avocado into a blender. Add the rest of the ingredients and blend until smooth. Add more sugar to taste, if desired. Serve over ice.
