B. is adamant about crisping the cooked meat in a hot skillet first. The meat takes on a new texture that’s great for sandwiches, tacos, and brunch hash. Here, soft tacos made with any cheater meat take on Asian flavors with a simple sweet-hot peanut BBQ sauce and some fresh fixings.
Ingredients
makes 6 to 8 servings2 pounds any leftover cheater meat, shredded or chopped
Juice of 1 or 2 limes
Min Dynasty BBQ Sauce
1 cup bottled plum sauce1/4 cup Asian hot chili sauce (sriracha)
1/2 cup chopped unsalted roasted peanuts
Taco Fixings
Small flour tortillas, warmed1 medium seedless cucumber, peeled and thinly sliced
1 medium red onion, cut into thin slivers
Fresh mint leaves
Fresh cilantro leaves
Step 1
HEAT the cheater meat in a large skillet over medium heat until warm and a little crusty. Squeeze fresh lime juice over the meat.
Step 2
COMBINE all the sauce ingredients in a small bowl and blend well.
