Ingredients
Makes 12 muffins1 1/2 cups white whole wheat flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup unsweetened applesauce
1/2 cup buttermilk
1/2 cup honey
1 large egg
1 teaspoon vanilla extract
1 cups peeled and chopped apples (about 2 medium apples)
Step 1
Preheat oven to 400 degrees F.
Step 2
In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
Step 3
In a separate bowl, whisk together the applesauce, buttermilk, honey, egg, and vanilla.
Step 4
Stir the dry ingredients into the wet ingredients and mix until just combined. Fold in the apples.
Step 5
Pour batter into greased muffin cups, about 3/4 full and bake 20 minutes, or until a wooden pick inserted in the center comes out clean.Cooks' Note
