Absinthe Minded

  Green and frothy in appearance, Absinthe Minded is a whimsical warm-weather drink. It uses the basic sour platform with gin as the base spirit, sugar (simple syrup) for body and texture, and acid (lime juice) for backbone and lift. With the addition of absinthe and mint, the drink takes on a refreshing mentholated quality.

Ingredients

Makes 1

  6 mint leaves

  ¾ oz. fresh lime juice

  ¾ oz. simple syrup (1:1)

  2 oz. gin, such as The Botanist

  ¼ oz. absinthe, such as St. George Absinthe Verte

  1 egg white (optional)

  Muddle mint, lime, and simple syrup in the bottom of a shaker, then add gin and absinthe. Shake with ice and double strain into a coupe. If using egg white, dry shake first. Garnish with a mint leaf.

  Cook's note:

  Add the egg white to the large tin and build the drink separately in the small tin before dry shaking. This way, if an errant eggshell or splash of yolk gets away from you, you won’t contaminate the rest of the drink. The “dry shake” means simply shaking without ice first to emulsify the egg white before beginning to dilute and chill with ice. Raw egg is not recommended for people who are pregnant or who have weakened immune systems…or people who don’t like raw eggs.
