Step 1
Preheat the oven to 400°F (200°C). Make a sloppy herb paste by mashing four large cloves of garlic with two tablespoons of chopped thyme and four of olive oil. Season with salt and black pepper. Cut 2 pounds (a kilo) of peeled pumpkin into small dice, add to a baking pan, and toss with the herb mixture. Bake for an hour or until the pumpkin is crisp outside and soft within.
